HCC students’ winning menu takes the North London Crown

London City Hospitality Centre’s (LCHC) students Danny Francomb and Yvonne Daley delivered a top class menu to beat off competition from other Colleges in North London.
LCHC, which is Hackney Community College’s hospitality center, took part in this competition for the first time since it started in 2009 and came out winners. The challenge to take the prized shield was for students to make a menu and incorporate key ingredients at each stage. For starters the ingredient they had to use was a globe artichoke, for the main course the students had to serve rabbit and for dessert it was a meringue. The LCHC students, with the guidance of tutor, Chef Mason, came up with the winning menu!
Ravioli of globe Artichoke, white wine & tomato butter sauce.
Braised leg and roasted loin of rabbit, sage & olive mousseline, fondant potato, glazed turned vegetables, rabbit jus.
Individual pavlova, lemon curd and pomegranate syrup.
When the criteria was revealed the students practised for 3 weeks to be well prepared for the competition which they had to complete within a set time. Chef Skippers, said on the win “I am very proud of my students; they have put LCHC on the map of a place of excellence for prospective catering students. I always tell my students ‘What you put into life, is what you get out’ and this proves it”
For winning the competition HCC is now engraved on the shield where it sits in Open Kitchen, the College’s training bar & restaurant which is open to the public. Our students work there as part of their course to gain essential industry experience and work skills.
HCC is looking forward to next year’s competition, which will be hosted by us.
